Cheese is congealed milk fats and protein.

It’s all in how it’s made. You’ll have better luck at Subway if you stay away from their American cheese and Swiss cheese. American cheese is a pale imitation of cheddar, and their swiss… well, all it shares with real swiss is the name. Provolone and jack cheeses are good at our local Subways. But I have noted (I tend toward Subway when traveling) that the fixings vary tremendously by location.

Please be sure to tell the franchisee you patronize why you are shopping at Subway now — it’s important to reward good behavior. Every single franchisee got the memo about not discriminating, and if they see that it promotes sales, they will be happy about it. Otherwise it may be seen by some as some top-down corporate edict that gains them nothing.

If it brings them your business, please tell them so.

Mike Rogers is a rock star. This is superb.

I never — never — buy from Subway, though there is one near my house. It’s just a store I don’t go to.

This weekend, we’re having sandwiches from Subway.
